nation.com and today I'm going to share with you a recipe from my fabulous cookbook the Paleo sweet tooth now this recipe I call chocolate mortar because
it's a foundational ingredient in many of the recipes that I share in the Paleo
sweet tooth everything from Nanaimo bars to chocolate fudge to truffles and
many more have this chocolate mortar as the base now what is the chocolate mortar
it's actually just dark chocolate and it only has four simple ingredients that
you probably have at home so stay tuned I'm going to show you how to make it
what the ingredients are and then hop over to my website if you want it all

get started our four basic ingredients are
coconut oil honey cocoa powder vanilla and if you want to up the level of
sweetness just a little bit without adding any extra actual sugar then you can
add a little bit of liquid stevia at the end okay so today I've got a nice
heavy bottom stainless steel one and a half-sized quart sized saucepan I've got
it over low heat so on my electric stove that's a one of the tricks to
making really silky smooth chocolate is to keep that heat very low you don't
want your chocolate to seize up and heat will do that so first I'm going to add
my coconut oil and I'm just gone let it melt in the pan before I add anything
else well I'm going to help it along here a little bit okay so I've got my
coconut oil melted and now I'm going to add my honey and I'm just gonna let
that honey melt with the coconut oil really soften up and that'll only take a minute or two depending on if you have crystallized honey or if it's room
temperature okay my honey is nice and melted and now I'm going to whisk in my
cocoa powder I'm going to dump it in all at once and whisk until I see some
gloss now see how it's already glossy I'm gonna take it off the heat at this
point okay so I'm just whisking to get it nice and glossy and smooth and just
thickening up it's so pretty oh my gosh okay I'm gonna add my vanilla just
whisk that in and I'm done now I can either put it on a Silpat put it in a
container for later in the fridge or put it in some sort of form for just
little fun chocolate shapes there are so many wonderful things you can do with
this chocolate so I'm gonna pour it into these fun little molds today these are
heart-shaped molds and they'll pop right out after I have them in the
refrigerator for a while my kids just love these especially when it's Valentine's The day another fun thing you can do is just simply put it on a Silpat lined baking
sheet-like I have under this and spread it about a quarter-inch thick and then
you can break it up into pieces and use it in some mores oh my gosh that's
really good and then of course like I said in the Paleo sweet tooth my cookbook
I have all sorts of applications for this fabulous dark chocolate and then of
course since you're the cook you get to lick the pan simple easy and so
